- In a large bowl, combine the organic chicken breast chunks with the jerk dry rub seasoning. Mix thoroughly and marinate for at least 3 hours, ideally overnight.
- Bring a large pot of salted water to a boil. Cook your short-cut pasta until al dente, then drain and set aside.
- In a large skillet, heat the extra virgin olive oil and sear the marinated chicken pieces until golden brown. Remove the chicken and set it aside.
- Sauté the chopped bell peppers and minced garlic in the same skillet until fragrant and softened.
- Sprinkle the flour and smoked paprika, then whisk in the heavy cream and chicken stock until smooth and thickened.
- Simmer with the seared chicken and thyme sprigs for 15-18 minutes, then stir in the Parmesan cheese.
- Add the drained pasta to the skillet, tossing gently to coat everything in the creamy sauce.
