For the Taquitos
  • 12 fajita-size flour tortillas Gluten-free tortillas can easily be used.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with nonstick spray or parchment paper.
  2. In a large mixing bowl, combine the cooked shredded chicken, cream cheese, lime juice, and salsa verde. Add in the dried minced onion, chili powder, garlic powder, and ground cumin. Toss in cilantro and green onion before mixing until well combined.
  3. Warm the tortillas in the microwave for about 30 seconds or until soft and flexible.
  4. Spread approximately 1/4 cup of the creamy chicken mixture down the center of each tortilla, roll tightly, and place seam side down on the baking sheet.
  5. Lightly spray the tops of the rolled taquitos with cooking spray and bake in the preheated oven for 15-20 minutes, or until golden and crisp.
  6. Once golden, remove from the oven and allow to cool for a minute. Serve warm with accompaniments like guacamole, sour cream, or salsa.
