Preparation Steps
- Preheat your oven to 180°C (350°F).
- Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
- In a skillet, heat olive oil over medium heat and add finely diced onion; sauté for about 4 minutes until translucent.
- Stir in minced garlic and freshly grated ginger and cook for about 1 minute until fragrant.
- Pour in the coconut milk, lemon juice, and lemon zest; stir and let simmer for 2-3 minutes.
- Place the seasoned cod fillets in a baking dish and pour the coconut lemon sauce over them.
- Bake for 12-15 minutes until the cod is opaque and flakes easily with a fork.
- Remove from the oven and let rest for about 2 minutes before serving.
