  • 1/2 cup Grated Parmesan Cheese substitute with pecorino
  • 1 large Egg or use a flax egg for vegan option
For Assembly and Baking
  • 1 cup Marinara Sauce opt for low-sugar versions
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Olive Oil or avocado oil
  • 1/4 cup Fresh Basil or use parsley

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Gather your baking dish and set it aside.
  2. Thinly slice the zucchini lengthwise using a mandoline or a sharp knife to create strips.
  3. In a bowl, combine ricotta, mozzarella, Parmesan, and egg. Season with salt and pepper.
  4. Spread a thin layer of marinara sauce in the baking dish.
  5. Assemble the rolls by placing zucchini strips with cheese mixture, rolling tightly, and placing seam-side down in the dish.
  6. Pour remaining marinara sauce over the rolls, sprinkle mozzarella, and drizzle olive oil.
  7. Bake in the oven for 25-30 minutes until bubbly and golden.
  8. Let the dish rest for a few minutes, garnish with basil, and serve.
