- Preheat your oven to 425°F (220°C). If you have a pizza stone, place it in the oven to heat up as well.
- In a medium-sized bowl, combine your shredded chicken with the BBQ sauce, mixing until the chicken is fully coated.
- Line a baking sheet with parchment paper or have your preheated pizza stone at the ready. Brush the flatbreads evenly with olive oil.
- Evenly distribute the BBQ chicken mixture across the flatbreads, sprinkle the shredded mozzarella and cheddar cheese, then add the red onion.
- Bake for 10–12 minutes until cheese is bubbly and edges are golden brown.
- Sprinkle chopped fresh cilantro over the flatbreads. Add any optional toppings and slice to serve.
