Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  3. Roast sweet potatoes for about 25 minutes until golden and fork-tender, stirring halfway.

  5. Reduce heat to low, add BBQ sauce to the skillet and simmer for 3-5 minutes.
  6. Prepare toppings: heat corn, slice avocado, and chop cilantro.
