Steps
  1. Begin by washing and peeling about three medium-sized carrots. Then, use a grater or julienne slicer to create fine, even strands of carrot.
  2. Select two apples, such as Honeycrisp or Granny Smith, and chop them into bite-sized pieces.
  3. In a medium bowl, combine half a cup of yogurt with the juice of half a lemon. If you’d like a touch of sweetness, add honey to taste. Whisk these ingredients together until smooth.
  4. In a large mixing bowl, carefully combine the grated carrots and chopped apples, then gently toss them together.
  5. Pour the creamy yogurt dressing over your carrot and apple mixture. Using a spatula, fold the dressing in slowly until each piece is coated.
