For the Citrus Vinaigrette

  • 1/4 cup Orange Juice Freshly squeezed.
  • 1 tablespoon Lemon Juice Optional.
  • 1 tablespoon Honey or Maple Syrup For sweetness.

Method
 

Step‑by‑Step Instructions
  1. Rinse the mixed salad greens thoroughly in cold water to remove any dirt. Drain well and gently pat them dry with a clean kitchen towel. Tear the greens into bite-sized pieces, then place them in a large serving bowl.
  2. Wash and slice the strawberries into thin rounds, segment the orange, removing any seeds, cut the cucumber into thin slices, and slice the red onion very thinly. Add all the colorful fruits and veggies into the bowl with the greens.
  3. In a small bowl, combine olive oil, orange juice, and optional lemon juice. Add honey or maple syrup, then season with a pinch of salt and pepper. Whisk vigorously for about 30 seconds until well combined.
  4. Drizzle the dressing over the salad mixture and gently toss everything together for about 15 seconds until nicely coated.
  5. Sprinkle crumbled feta cheese and toasted walnuts or pecans over the top of the salad. Serve immediately for the best flavor and freshness.
