  • 2 handfuls Mixed Salad Greens a mix of spinach, arugula, and romaine
  • 1 cup Strawberries fresh, hulled, and sliced
  • 1 Orange Orange juicy, zesty segments
  • 1 Cucumber Cucumber thinly sliced
  • 1 small Red Onion adds a sharp bite
  • ¼ cup Feta Cheese optional, crumbled
  • ½ cup Walnuts or Pecans toasted, for crunch
For the Citrus Vinaigrette
  • ¼ cup Olive Oil dressing base
  • 1 Orange Orange Juice freshly squeezed
  • ½ lemon Lemon Juice to balance flavors
  • 1-2 tablespoons Honey or Maple Syrup to taste
  • Salt and Pepper to taste

Method
 

Preparation
  1. In a large mixing bowl, combine two generous handfuls of mixed salad greens, a cup of fresh strawberries, and the segmented pieces of a juicy orange. Toss gently.
  2. In a medium bowl, whisk together ¼ cup of olive oil, the juice of one orange, and the juice of half a lemon. Incorporate one to two tablespoons of honey or maple syrup, along with salt and pepper.
  3. Drizzle the vinaigrette over the prepared salad base and toss gently to coat evenly.
  4. Sprinkle ¼ cup of crumbled feta cheese and a handful of toasted walnuts or pecans over the salad.
  5. Serve immediately or chill for up to 30 minutes before serving.
