- In a large mixing bowl, combine 1 cup of old-fashioned rolled oats, 1 scoop of vanilla protein powder, the zest of 1 large lemon, and 2 tablespoons of poppy seeds.
- Next, add in 1/2 cup of almond butter, 1/4 cup of honey (or maple syrup), 2 tablespoons of freshly squeezed lemon juice, 1 teaspoon of vanilla extract, and a pinch of salt to the dry mix. Mix until a sticky dough forms.
- If too dry, add 1 teaspoon of water or lemon juice gradually, or incorporate more oats/protein powder if too wet.
- Scoop approximately 1 tablespoon of the mixture and roll into a ball. Place each ball on a parchment-lined tray.
- Cover and refrigerate for about 30 minutes to firm up before serving.
