Ingredients
  

For the Cod Bites
  • 1 lb Cod fillets or substitute with haddock or tilapia
  • ½ cup All-purpose flour for coating
  • ½ cup Cornmeal for coating
  • 2 tbsp Cajun seasoning adjust for spice preference
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 pinch Cayenne pepper adjust for spice preference
  • to taste Salt
  • to taste Black pepper
  • 2 large Eggs for egg wash
  • 2 tbsp Milk for egg wash
  • ½ cup Vegetable oil for frying
For the Lemon Yogurt Sauce
  • 1 cup Greek yogurt
  • 2 tbsp Lemon juice
  • 1 tbsp Honey
  • to taste Salt for sauce
  • to taste Pepper for sauce

Method
 

Preparation
  1. In a medium bowl, combine Greek yogurt, lemon juice, lemon zest, honey, salt, and pepper. Mix until smooth, then cover and refrigerate.
  2. In a shallow dish, blend flour, Cajun seasoning, garlic powder, paprika, cayenne, salt, and pepper. In another bowl, whisk eggs and milk. Place cornmeal in a third dish.
  3. Dredge cod pieces in the flour mixture, dip in the egg wash, and coat with cornmeal.
  4. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  5. Fry coated cod pieces in batches for 3-4 minutes on each side until golden brown. Transfer to a paper towel-lined plate.
  6. Serve Cajun Cod Bites hot with lemon yogurt sauce for dipping.
