Step-by-Step Instructions
  1. Marinate the chicken: Combine chicken thighs with allspice, salt, pepper, garlic, and thyme in a bowl. Cover and marinate for at least 30 minutes or overnight.
  2. Sear the chicken: Heat oil in a skillet over medium-high heat. Sear chicken skin-side down for 4-5 minutes until golden brown.
  3. Sauté the aromatics: Add onion, garlic, and pepper to the skillet. Sauté for 3-4 minutes until onion is soft and translucent.
  4. Cook the rice: Stir in rice and coat with the mixture. Add chicken broth and bring to simmer. Nestle seared chicken back into the skillet.
  5. Simmer to perfection: Cover and simmer on low heat for about 20 minutes until rice is tender and chicken is cooked through.
