  • 1 cup Breadcrumbs gluten-free if desired
  • 1 Egg
  • 1/2 cup Milk plant-based works for dairy-free diets
  • 1 medium Onion (finely chopped)
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Worcestershire Sauce or substitute with soy sauce and vinegar
  • 1/4 cup Ketchup used on top for extra flavor
For the Potato Layer
  • 4 cups Mashed Potatoes homemade or store-bought
  • 1 cup Shredded Cheddar Cheese or mozzarella/pepper jack for different flavors
Finishing Touches
  • 4 slices Cooked Bacon (crumbled)
  • 1/4 cup Chopped Green Onions or Chives optional garnish

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup. Mix until well combined and press into a greased 9x9-inch baking dish, spreading remaining ketchup on top.
  3. Bake the meatloaf for 20-25 minutes until cooked through and edges pull away from the dish.
  4. Spread mashed potatoes over the top of the meatloaf, sprinkle with cheddar cheese, and add crumbled bacon on top.
  5. Return to the oven and bake for an additional 10-15 minutes until cheese is melted and bubbly. Broil for an extra crispy finish if desired.
  6. Let cool slightly before garnishing with green onions or chives. Slice and serve warm.
