  • 1/2 cup Sugar or coconut sugar
  • 2 large Eggs beaten until pale
  • 1 tbsp Lemon Juice fresh or bottled
  • 1 tsp Vanilla Extract or almond extract
For the Base
  • 12 pieces Vanilla Wafers or gluten-free wafers
For the Topping
  • 1 can Cherry Pie Filling or substitute with other fruit fillings

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 190°C (375°F).
  2. Line a muffin pan with colorful cupcake liners and place one vanilla wafer at the bottom of each liner.
  3. In a mixing bowl, beat your softened cream cheese until smooth and creamy.
  4. Add in the sugar, eggs, lemon juice, and vanilla extract and mix until light and fluffy.
  5. Carefully fill each cupcake liner with the cheesecake mixture about three-quarters full.
  6. Bake for 15-20 minutes until the centers are set and slightly puffed.
  7. Let the cupcake bites cool completely in the pan at room temperature.
  8. Top each cooled cheesecake bite with a spoonful of cherry pie filling.
