- Line a muffin pan with colorful cupcake liners and place one vanilla wafer at the bottom of each liner.
- In a mixing bowl, beat your softened cream cheese until smooth and creamy.
- Add in the sugar, eggs, lemon juice, and vanilla extract and mix until light and fluffy.
- Carefully fill each cupcake liner with the cheesecake mixture about three-quarters full.
- Bake for 15-20 minutes until the centers are set and slightly puffed.
- Let the cupcake bites cool completely in the pan at room temperature.
- Top each cooled cheesecake bite with a spoonful of cherry pie filling.
