  • 2 cups Zucchini Washed and shredded

  • 1/2 cup Melted Butter Vegetable oil can replace it for a dairy-free option
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon Adjust according to taste
  • 1/2 teaspoon Nutmeg Adjust according to taste
  • 1/2 teaspoon Ground Ginger Adjust according to taste
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Vanilla Extract
  • 1 cup Chocolate Chips Semi-sweet, dark, or milk chocolate based on preference
For the Topping
  • 1 tablespoon Turbinado Sugar Can be omitted if unavailable

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease the loaf pan.
  2. Wash and shred the zucchini, then squeeze out excess moisture.
  3. Combine flour, baking powder, baking soda, spices, and salt in a bowl.
  4. Blend brown sugar, eggs, and melted butter until smooth, then fold in zucchini and vanilla.
  5. Combine wet and dry ingredients without overmixing, folding in half of the chocolate chips.
  6. Pour batter into the pan, top with remaining chocolate chips and turbinado sugar.
  7. Bake for 50 to 65 minutes until golden brown and a toothpick comes out clean.
  8. Cool for 10 minutes in the pan and then transfer to a wire rack to cool completely.
