Method
 

Peanut Butter Filling
  1. Mix creamy peanut butter, sifted powdered sugar, and ground cinnamon in a bowl. Form small dollops and freeze for about 1 hour.
Prepare Dough
  1. In a large bowl, whisk together all-purpose flour, cocoa powder, baking soda, and salt.
  2. In another bowl, combine melted butter, brown sugar, granulated sugar, vanilla extract, and eggs. Whisk until well combined.
  3. Fold dry ingredients into wet ingredients gently to combine.
  4. Fold in chocolate chips.
  5. Let the dough rest at room temperature for about 10 minutes.
Assemble Cookies
  1. Scoop out dough, create a thumbprint, place a frozen peanut butter dollop in, and roll the dough around it.
  2. Place on a cookie sheet and bake at 350°F (175°C) for 13-15 minutes.
  3. Allow cooling on the sheet for about 5 minutes before transferring to a cooling rack.
