Step‑by‑Step Instructions for Cinnamon Streusel Coffee Cake
  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. Cream together 1/2 cup of softened butter with 3/4 cup of white sugar until light and fluffy.
  3. Add 2 teaspoons of vanilla extract and 2 eggs to the mixture and beat until fully incorporated.
  4. In a separate bowl, whisk together 2 cups of flour, 2 teaspoons of baking powder, and a pinch of salt. Gradually add this to the wet mixture along with 3/4 cup of milk.
  5. Pour half of the batter into the prepared pan and smooth it out evenly.
  6. Mix together 5 tablespoons of cold butter, 1/2 cup of brown sugar, 1 tablespoon of cinnamon, and a bit of flour for the cinnamon swirl. Sprinkle over the first layer of batter and swirl it in.
