  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
  2. Whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt in a medium bowl and set aside.
  3. In a large mixing bowl, cream together 1/2 cup of softened unsalted butter and 1 cup of brown sugar until light and fluffy, about 2-3 minutes.
  4. Add 2 large eggs, mixing well after each addition, then stir in 1/2 cup of plain Greek yogurt and 1 teaspoon of vanilla extract until smooth.
  5. Mash 2 ripe bananas and fold them into the wet mixture until there are no large lumps.
