Step-by-Step Instructions for Cinnamon Swirl Banana Bread
- Preheat your oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
- Whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt in a medium bowl and set aside.
- In a large mixing bowl, cream together 1/2 cup of softened unsalted butter and 1 cup of brown sugar until light and fluffy, about 2-3 minutes.
- Add 2 large eggs, mixing well after each addition, then stir in 1/2 cup of plain Greek yogurt and 1 teaspoon of vanilla extract until smooth.
- Mash 2 ripe bananas and fold them into the wet mixture until there are no large lumps.
- Gradually fold the dry mixture into the wet ingredients, mixing until just combined, while keeping the batter slightly lumpy.
- Mix together 1/4 cup of granulated sugar and 1 tablespoon of ground cinnamon in a small bowl and set aside.
- Pour half of the batter into the prepared loaf pan, then sprinkle half of the cinnamon sugar mixture on top.
- Carefully spoon the remaining batter on top and sprinkle with the remaining cinnamon sugar mixture.
- Using a butter knife, swirl through the batter and cinnamon sugar to create a marbled effect.
- Bake for 60–65 minutes or until a toothpick comes out clean or with a few moist crumbs attached.
- Let the bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes
Using very ripe bananas is key for maximum sweetness and moisture. Avoid overmixing to maintain a tender crumb. Feel free to experiment with add-ins like nuts or chocolate chips for a unique twist.
