  • 1 cup Yogurt (Dairy or Plant-Based) Greek yogurt works best
  • 1/4 cup Cashews optional for nut-free version
  • 1/2 cup Tofu silken tofu recommended
  • 1 medium Cucumber or zucchini as alternative
  • 1 tablespoon Red Wine Vinegar apple cider vinegar can be used
  • 1 tablespoon Lemon Juice can substitute with lime juice

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Chop the potatoes into ¾-inch cubes, dice the red bell pepper, and cut the red onion into wedges. Rinse chickpeas.
  3. Mix paprika, dried herbs, salt, and black pepper in a small bowl.
  4. Combine prepared vegetables and chickpeas on a baking sheet. Drizzle with olive oil and sprinkle spice blend, then toss to coat.
  5. Spread mixture in a single layer and roast for 40 minutes, stirring halfway through.
  6. Blend yogurt, cashews, tofu, and garlic until smooth.
  7. Grate cucumber and mix with blended ingredients, vinegar, and lemon juice; blend until smooth.
  8. Once roasted, layer tzatziki sauce and veggies in bowls.
