- Preheat your oven to 400°F (200°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Season cubed chuck steak with salt and pepper, and brown for 5-7 minutes. Remove meat from pot and set aside.
- Melt unsalted butter in the same pot, add onions, salt, and brown sugar. Cook on low for about 30 minutes until caramelized.
- Add minced garlic to the onions and cook for another minute. Stir in Worcestershire sauce, Dijon mustard, and tomato paste. Cook for 1 minute.
- Return the beef to the pot, sprinkle with flour, and gradually stir in beef broth and Marsala wine. Mix well to create a thick broth.
- Add bay leaves and thyme, bring to a gentle simmer, cover partially, and cook on low for about 90 minutes until beef is tender.
- Slice a baguette, brush with olive oil, spread with Dijon mustard, and top with Gruyere and Parmesan cheeses. Broil for about 5 minutes until golden.
- Remove bay leaves and ladle stew into bowls. Top with cheesy bread and garnish with fresh thyme.
