- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add finely chopped onion and minced garlic, sautéing for about 3-4 minutes until translucent and fragrant.
- Stir in the fresh broccoli florets and pour in the vegetable broth, bringing to a boil. Reduce heat and simmer for about 10 minutes until broccoli is tender.
- Blend the soup until creamy and smooth. Use an immersion blender or transfer batches to a regular blender.
- Return the blended soup to the pot over low heat, stir in 1 cup of heavy cream, and add shredded cheddar cheese until it melts completely.
- Season with salt and pepper. Ladle into bowls and optionally sprinkle extra cheese or fresh herbs before serving.
