  4. Fold in grated carrots and sour cream gently.
  5. Sift in flour, cinnamon, nutmeg, and salt. Fold until just combined.
  6. Pour mixture into the springform pan, spreading evenly.
  7. Bake for approximately 50 minutes until edges are set but center is slightly wobbly.
  8. Remove from oven, cool for 30 minutes, then refrigerate for at least 4 hours or overnight.
