Method
 

Preparation Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil or cooking spray.
  2. In a large pot, bring salted water to a boil and cook lasagna noodles until al dente, about 8-10 minutes. Drain and rinse with cold water.
  3. Heat olive oil in a large skillet, add diced onion, and sauté until translucent, about 5 minutes. Stir in minced garlic for 1 minute.
  4. Add sliced mushrooms, dried thyme, salt, and pepper to the skillet. Sauté for 7-10 minutes until mushrooms are tender.
  5. Add chopped spinach and cook until wilted, about 2-3 minutes.
  6. Spread a thin layer of marinara sauce at the bottom of the baking dish. Place three noodles on top, then spread half of the ricotta cheese.
  7. Add half of the sautéed mushroom and spinach mixture, and sprinkle mozzarella and Parmesan cheese.
  8. Repeat layers: three noodles, remaining ricotta, remaining mushroom and spinach mixture, and a handful of cheese.
  9. Top with another layer of noodles and cover with remaining marinara sauce.
  10. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  11. Let cool for 10-15 minutes before serving. Garnish with fresh basil.
