Preparation Instructions
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil or cooking spray.
- In a large pot, bring salted water to a boil and cook lasagna noodles until al dente, about 8-10 minutes. Drain and rinse with cold water.
- Heat olive oil in a large skillet, add diced onion, and sauté until translucent, about 5 minutes. Stir in minced garlic for 1 minute.
- Add sliced mushrooms, dried thyme, salt, and pepper to the skillet. Sauté for 7-10 minutes until mushrooms are tender.
- Add chopped spinach and cook until wilted, about 2-3 minutes.
- Spread a thin layer of marinara sauce at the bottom of the baking dish. Place three noodles on top, then spread half of the ricotta cheese.
- Add half of the sautéed mushroom and spinach mixture, and sprinkle mozzarella and Parmesan cheese.
- Repeat layers: three noodles, remaining ricotta, remaining mushroom and spinach mixture, and a handful of cheese.
- Top with another layer of noodles and cover with remaining marinara sauce.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let cool for 10-15 minutes before serving. Garnish with fresh basil.

Season each layer, avoid overdoing the sauce, and allow resting time for better slicing. Experiment with different cheeses for flavor.
