  • 12 oz Penne Pasta alternatives include fusilli or farfalle
For the Sauce
  • 1 cup Heavy Cream or half-and-half or coconut cream for a lighter option
  • 1 cup Sun-Dried Tomatoes preferably packed in oil
  • 1 cup Parmesan Cheese freshly grated is best
  • 3 cloves Garlic minced, fresh preferred
  • 2 tablespoons Olive Oil for sautéing

Method
 

Cooking Instructions
  1. Boil the pasta in a large pot of salted water for 10-12 minutes until al dente. Drain and set aside, reserving some pasta water.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add chopped sun-dried tomatoes to the skillet and cook for 2-3 minutes.
  4. Pour in heavy cream and bring to a gentle simmer for 2-3 minutes.
  5. Gradually add grated Parmesan cheese while stirring until melted and creamy.
  6. Season the sauce with red pepper flakes, salt, and pepper to taste, and simmer for 2 minutes.
  7. Add the drained pasta to the skillet and toss with the sauce for 1-2 minutes.
  8. Serve garnished with chopped basil and extra Parmesan cheese.
