  • 12 ounces pasta gluten-free pasta can be used if needed
For the Vegetables
  • 2 cups mixed vegetables (Broccoli, Cauliflower, Carrots, Sugar Snap Peas, Cherry Tomatoes) other veggies like zucchini and bell peppers can be added
For the Sauce
  • 1 cup Parmesan cheese freshly grated for best results
  • 2 tablespoons olive oil can substitute with butter
Optional Protein
  • 1 cup cooked chicken or shrimp optional, cook before adding to veggies

Cooking Steps
  1. Heat the olive oil in a large skillet over medium heat until shimmering, about 2 minutes.
  2. If using, cook chicken or shrimp in the skillet for 5–7 minutes until golden brown, then set aside.
  3. Add the mixed vegetables to the skillet and sauté for 4–5 minutes until softened.
  4. Stir in pasta and enough water or broth to cover, bringing to a rapid boil, then reduce heat to low and simmer for 10-15 minutes.
  5. Stir in Parmesan cheese until melted into a creamy sauce, adding reserved pasta water if needed.
  6. Fold in the cooked chicken or shrimp, warming through for 1 minute before serving.
