Method
 

Cooking Steps
  1. Preheat your oven to 425°F (220°C). Coat a cooling rack with nonstick spray and place it on a baking sheet.
  2. Combine chicken chunks with Ranch seasoning, cayenne pepper, kosher salt, and black pepper. Marinate for at least 30 minutes.
  3. In a bowl, whisk together buttermilk and one large egg until combined. Set aside.
  4. Combine cornflake crumbs, Parmesan cheese, salt, and any additional seasonings in a bowl.
  5. Dredge marinated chicken in all-purpose flour, dip in buttermilk mixture, and roll in cornflake crumbs.
  6. Place chicken nuggets onto the cooling rack and spray the tops lightly with nonstick spray.
  7. Bake for 13-15 minutes until golden brown and fully cooked.
