  • 1 large Egg or flaxseed meal mixed with water for vegan

  • 2 cups Cranberries fresh or frozen
  • 3/4 cup Granulated Sugar honey or maple syrup as alternatives
  • 1/2 cup Orange Juice lemon juice as substitute

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Pat the turkey breast fillets dry using paper towels. Season with salt and black pepper.
  3. In a mixing bowl, combine fresh breadcrumbs, grated Parmesan cheese, chopped parsley, dried thyme, and lemon zest. Add olive oil and mix until combined.
  4. Dip each turkey fillet into a beaten egg, coat with breadcrumb mixture on all sides.
  5. Heat olive oil in an ovenproof skillet over medium-high heat. Sauté the coated turkey fillets for 2-3 minutes on each side until golden brown.
  6. Transfer the skillet to the oven and bake for 10-12 minutes until internal temperature reaches 165°F (74°C).
  7. While the turkey bakes, combine cranberries, sugar, orange juice, zest, and cinnamon in a saucepan. Bring to a boil, then simmer for 8-10 minutes until thickened.
  8. Plate the hot turkey fillets and spoon the cranberry sauce over the top. Serve immediately.
