  • 1 teaspoon Onion Powder
  • 1 teaspoon Cumin
  • 1 pinch Nutmeg
  • 1 teaspoon Smoked Paprika
For Assembly
  • 1 cup Vegan Cheese Use favorite brand or homemade sauce
  • 8 pieces Tortillas Corn or wheat, warmed
For Baking/Frying
  • 1 tablespoon Oil For brushing

Step-by-Step Instructions
  1. Prepare Filling: Boil chopped potatoes in salted water for about 15 minutes until fork-tender. Drain and mash until smooth.
  2. Sauté Vegetables: Heat oil in a skillet, add diced onion and sauté for 3–4 minutes. Stir in grated carrot and minced garlic, cook for 2–3 minutes.
  3. Combine Filling: Mix thawed peas, spices, and vegetable broth into the mashed potatoes until well combined. Adjust seasoning as needed.
  4. Preheat Oven or Air Fryer: Set oven to 410°F (210°C) or air-fryer to 350°F (175°C).
  5. Assemble Taquitos: Warm tortillas, place filling in the center, roll tightly, and secure seam-side down on a lined baking sheet.
  6. Bake/Fry: Brush with oil, sprinkle seasoning, and bake for 17–20 minutes until crispy, or air fry for 6–8 minutes.
  7. Serve: Enjoy warm with salsa, guacamole, or vegan sour cream.
