Preparation
- Soak 1 cup of dried garbanzo beans in water with 1 teaspoon of baking soda overnight. Drain and rinse thoroughly under cold water until clear.
- In a food processor, pulse cilantro and mint until chopped. Add chickpeas, garlic, salt, black pepper, coriander, cumin, and chili powder. Process to a coarse meal and refrigerate for at least 1 hour.
- Stir in sesame seeds and baking powder into the mixture. Form small balls (about 2 inches), slightly flatten them, and prepare to fry.
- Heat oil in a skillet over medium-high heat. Fry falafel balls in batches for about 2 minutes on each side until golden brown. Drain on paper towels.
- Spread hummus on warm pita bread, then layer with tomatoes, cucumbers, lettuce, red onions, and crispy falafel. Drizzle with tzatziki sauce and sprinkle with dill. Serve immediately.
