Method
 

Step-by-Step Instructions
  1. Soak the Noodles: Bring a pot of water to a rolling boil. Add the egg noodles and soak for 30 seconds to 1 minute until softened. Drain and set aside.
  2. Prepare the Sauce: Combine dark soy sauce, regular soy sauce, oyster sauce, fish sauce, sugar, and a splash of water in a bowl. Whisk until the sugar dissolves.
  3. Sauté the Onions: Heat corn oil in a wok over medium heat. Add yellow onion and white parts of green onions. Sauté for 1 minute until fragrant.
  4. Fry the Noodles: Add another tablespoon of corn oil to the wok. Spread drained noodles in an even layer. Fry for about 2 minutes until golden brown and crispy, then flip and cook for another 2 minutes.
  5. Combine the Ingredients: Add the sautéed onions back to the wok with green onion tops and bean sprouts. Pour in the sauce and stir-fry for 1-2 minutes until noodles are coated.
  6. Finishing Touches: Drizzle with sesame oil and toss well. Serve immediately while hot and crispy.
