- Pat the chicken wings dry with paper towels. Separate the drumettes from the wingettes.
- Drizzle wings lightly with olive oil and season with garlic powder, smoked paprika, salt, and pepper. Toss to coat and let marinate for 15-30 minutes.
- Preheat the air fryer to 375°F (190°C). Arrange the seasoned wings in the fryer basket in a single layer.
- Air fry the wings for 5 minutes, flip them skin side down, and cook for an additional 8 minutes until golden and crispy.
- Mix Dijon mustard, whole grain mustard, cayenne powder, and a pinch of salt. Reserve some for glazing later.
- Add apple cider vinegar and honey to the remaining mustard mixture and stir until combined.
- Remove wings, brush with the mustard-oil mixture, and air fry for 5 more minutes to glaze.
- Toss wingettes in honey mustard sauce and air fry for an additional 2 minutes. Ensure drumettes reach 165°F (74°C).
- Serve hot with remaining dipping sauce. Optionally garnish with parsley or sesame seeds.
