- Peel and chop 2 large potatoes into chunks, boil in salted water for 15-20 minutes, then mash until smooth.
- Combine mashed potatoes with 1 cup of shredded cheese, 1 tsp salt, 1/2 tsp black pepper, 1 tsp garlic powder, and 1/4 cup cornstarch until fully mixed.
- Shape mixture into sticks about 3-4 inches long and place on a parchment-lined baking sheet.
- Beat 2 eggs in a bowl and set up a breading station with 1 cup of breadcrumbs. Dip sticks in egg, then coat with breadcrumbs.
- Chill the coated sticks in the refrigerator for 20-30 minutes for better texture.
- Heat about 1-2 inches of oil in a deep pan to 350°F. Fry sticks for 3-4 minutes on each side until golden brown.
- Remove from oil and drain on paper towels. Serve hot with your favorite dip.
