Ingredients
  

For the Dumplings
  • 1 tablespoon neutral oil ideal for frying
  • 1 teaspoon ginger (minced) preferably fresh
  • 1 teaspoon garlic (minced) or garlic powder
  • 8 ounces shrimp (raw, diced) tail removed
  • 1 cup cabbage (shredded) or bok choy/kale
  • 1 cup carrots (shredded) or shredded zucchini
  • 2 stalks green onions (sliced) or chives
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon sesame oil or olive oil
  • 8 pieces rice paper wraps soak briefly in warm water
For the Dipping Sauce
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon chili oil or red pepper flakes
  • 1 teaspoon granulated sugar or honey/maple syrup
  • 1 teaspoon fresh ginger (minced)
  • 1 clove fresh garlic (minced)
  • crushed red pepper flakes optional

Method
 

Step‑by‑Step Instructions
  1. Heat 1 tablespoon of neutral oil in a nonstick skillet over medium heat. Add minced garlic and ginger and sauté for 30 seconds until fragrant. Stir in shrimp, cabbage, carrots, and green onions. Cook for 3-4 minutes or until shrimp is pink.
  2. Remove the skillet from heat and stir in soy sauce and sesame oil. Allow to cool slightly.
  3. In a shallow dish, fill warm water and dip rice paper wraps for 10-15 seconds. Lay on a clean surface.
  4. Take 2-3 tablespoons of cooled filling and place in bottom third of rice paper wrap. Fold and roll tightly to seal.
  5. Heat remaining oil in the skillet over medium-high heat. Fry dumplings seam-side down for 2-3 minutes per side until golden brown.
  6. In a small bowl, whisk together dipping sauce ingredients. Adjust spice level as needed.
  7. Transfer fried dumplings to a platter and serve warm with dipping sauce.
