Directions
  1. Begin by quartering your medium sweet potatoes and placing them in a large pot of salted water. Bring the water to a boil, then allow the potatoes to cook for 18-20 minutes until they are fork-tender.
  2. Once the sweet potatoes are cooked, carefully drain them and transfer them to a baking sheet lined with parchment paper. Using the bottom of a glass or a potato masher, gently flatten each potato piece to about half an inch thick.
  3. In a small bowl, melt your butter and mix it with the paprika, Italian seasoning, garlic powder, salt, and black pepper to create a flavorful seasoning blend. Brush this mixture generously over each smashed potato.
  4. Preheat your oven to 400°F (200°C) and place the baking sheet in the oven. Bake the seasoned sweet potatoes for 25-30 minutes or until they are golden brown and crispy around the edges.
  5. As soon as your Crispy Smashed Sweet Potatoes are beautifully golden, remove them from the oven. Immediately sprinkle grated parmesan cheese and fresh thyme over the hot potatoes.
