- Begin by quartering your medium sweet potatoes and placing them in a large pot of salted water. Bring the water to a boil, then allow the potatoes to cook for 18-20 minutes until they are fork-tender.
- Once the sweet potatoes are cooked, carefully drain them and transfer them to a baking sheet lined with parchment paper. Using the bottom of a glass or a potato masher, gently flatten each potato piece to about half an inch thick.
- In a small bowl, melt your butter and mix it with the paprika, Italian seasoning, garlic powder, salt, and black pepper to create a flavorful seasoning blend. Brush this mixture generously over each smashed potato.
- Preheat your oven to 400°F (200°C) and place the baking sheet in the oven. Bake the seasoned sweet potatoes for 25-30 minutes or until they are golden brown and crispy around the edges.
- As soon as your Crispy Smashed Sweet Potatoes are beautifully golden, remove them from the oven. Immediately sprinkle grated parmesan cheese and fresh thyme over the hot potatoes.
