  • 2 medium zucchinis coarsely grated
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 splash lemon juice
For the Lemon Yogurt
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 pinch salt

Cooking Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Coarsely grate the zucchinis, squeeze out excess moisture, and set aside.
  3. In a mixing bowl, combine flour, baking powder, and salt.
  4. In another bowl, whisk together eggs, Parmesan cheese, and lemon juice.
  5. Gradually add the drained zucchini to the wet mixture and combine.
  6. Fold the wet mixture into the dry ingredients until no dry spots remain.
  7. Form patties with about 1/4 cup of the batter and place on the baking sheet.
  8. Bake for 20-25 minutes until golden brown and edges are crisp.
  9. Mix yogurt, lemon juice, and salt in a small bowl for sauce.
  10. Cool fritters for 5 minutes on the baking sheet, then serve warm with lemon yogurt.
