Ingredients
  

  • 1 pound sliced beef also known as steak
  • 2 cups bell peppers sliced
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 1 can beef broth
  • 1 package cheesy tortellini fresh or frozen
  • to taste salt
  • to taste pepper
  • to taste Italian herbs such as oregano or basil
  • 1 cup shredded cheese for topping

Method
 

  1. Prepare the ingredients by gathering sliced beef, bell peppers, onion, garlic, and cheesy tortellini. Cut bell peppers and onion into thin slices, and mince the garlic.
  2. In a large skillet over medium heat, add a splash of oil and sauté the sliced onions and bell peppers for about 5 minutes until tender and caramelized.
  3. Increase the heat, add sliced beef to the skillet, and cook for about 5-7 minutes until browned on all sides. Transfer to the Crock Pot.
  4. Pour in a can of beef broth, add seasonings, and mix well with the beef and vegetables. Add tortellini on top without stirring.
  5. Cover the Crock Pot and set it to low for about 4-5 hours or high for 2-3 hours.
  6. About 15-30 minutes before serving, uncover and sprinkle cheese on top. Cover again to let cheese melt.
  7. Once cheese is melted and tortellini is tender, serve using a large spoon and enjoy!
