- Prepare the ingredients by gathering sliced beef, bell peppers, onion, garlic, and cheesy tortellini. Cut bell peppers and onion into thin slices, and mince the garlic.
- In a large skillet over medium heat, add a splash of oil and sauté the sliced onions and bell peppers for about 5 minutes until tender and caramelized.
- Increase the heat, add sliced beef to the skillet, and cook for about 5-7 minutes until browned on all sides. Transfer to the Crock Pot.
- Pour in a can of beef broth, add seasonings, and mix well with the beef and vegetables. Add tortellini on top without stirring.
- Cover the Crock Pot and set it to low for about 4-5 hours or high for 2-3 hours.
- About 15-30 minutes before serving, uncover and sprinkle cheese on top. Cover again to let cheese melt.
- Once cheese is melted and tortellini is tender, serve using a large spoon and enjoy!
