Step-by-Step Instructions
  1. Melt butter (or coconut oil) in your crock pot on high heat. Add sliced onions and caramelize for about 30 minutes.
  2. Season the chuck roast with salt and pepper, and place on top of the caramelized onions in the crock pot.
  3. Pour in beef broth and Worcestershire sauce, then add minced garlic and thyme. Optionally, include brown sugar.
  4. Cover and cook on low heat for about 8 hours until the beef is fork-tender.
  5. Check the gravy halfway through cooking and stir. Add cornstarch slurry if a thicker gravy is desired.
  6. Serve the pot roast on a platter with gravy ladled over the meat, topped with melted Gruyère cheese if desired.
