Step-By-Step Instructions for Crockpot Beef Stew
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Toss in the cubed beef coated lightly with flour and sear until browned. Transfer to crockpot.
  2. Add 3 sliced carrots, 3 diced potatoes, 1 chopped onion, and 3 minced garlic cloves to the crockpot.
  3. Pour in 4 cups of beef broth, 2 tablespoons of tomato paste, and season with 1 teaspoon of dried thyme, salt, and black pepper to taste.
  4. Cover the crockpot and set to cook on low for 8 hours.
  5. About 30 minutes before serving, stir in 1 cup of frozen peas.
