Step‑by‑Step Instructions
  1. Generously season the chicken with Cajun seasoning, salt, and black pepper. Place in the bottom of the slow cooker.
  2. Melt butter in a skillet, sauté chopped onion for 3-4 minutes, then add minced garlic and cook for another minute.
  3. Pour the sautéed onion and garlic mixture over the chicken, sprinkle with smoked paprika and oregano, and add chicken broth.
  4. Cover and slow cook on low for 6 hours until chicken is tender.
  5. Shred the chicken in the pot using two forks.
  6. Stir in heavy cream and let it heat on low for 15-20 minutes.
  7. Serve over rice or pasta and garnish with fresh parsley.
