  • 3 tablespoons Swerve brown sugar substitute
  • 4 tablespoons melted butter
Filling
  • 2 cups cottage cheese (small curd, full fat)
  • 1 cup Greek yogurt (plain)
  • 3 tablespoons Swerve confectioners sugar substitute
  • 1 teaspoon vanilla extract
  • 3 large eggs

Preparation Steps
  1. Preheat your oven to 350°F (175°C).

  3. In a blender, blend the cottage cheese, Greek yogurt, Swerve confectioners sugar substitute, vanilla extract, and large eggs until smooth.
  4. Pour the filling over the cooled crust and smooth the top.
  5. Bake in the oven for 40 to 45 minutes until edges are set and center is slightly jiggly.
  6. Cool the cheesecake at room temperature for an hour, then refrigerate for at least 4 hours.
