- Microwave 1 cup of peanut butter for 30 seconds, stir until pourable, spread in an 8-inch pan, freeze for 1 hour.
- Preheat oven to 350°F (176°C) and line the same pan with parchment paper.
- Combine 1/2 cup butter and 8 oz chocolate in a bowl, microwave until melted, whisk in 1 cup sugar, then add 2 eggs and 1 tsp vanilla; mix until smooth.
- Sift together 1/2 cup flour, 1/4 cup cocoa, and a pinch of salt into batter, gently fold until just combined.
- Spread half of the brownie batter in the pan, layer the frozen peanut butter, then add the remaining batter on top.
- Bake for about 30 minutes until edges are set and center is slightly gooey.
- Cool in pan for 30 minutes, transfer to wire rack for another 30 minutes, then slice and serve.
