  • 1 pound Ground Beef (80/20) Can replace half with ground lamb for extra richness.
  • 1/2 pound Ground Lamb Optional for added richness.
  • 1 medium Yellow Onion Grate and lightly squeeze before using.
  • 3 cloves Garlic Finely mince for the best flavor.
  • 1 tablespoon Fresh Ginger Finely mince before adding.
  • 1/4 cup Fresh Parsley Chop finely for even distribution.
  • 1/4 cup Fresh Mint Chop finely to release oils.

Method
 

Preparation
  1. Grate the yellow onion and lightly squeeze to remove excess liquid.
  2. Finely mince the garlic and ginger, and chop the fresh parsley and mint.
  3. Combine the ground beef, optional ground lamb, grated onion, minced garlic and ginger, and all chopped herbs.
  4. Add the spices and tomato paste, and mix well.
  5. Cover and refrigerate for at least 30 minutes.
  6. Shape the mixture into kebabs and preheat the grill to medium-high heat.
  7. Grill the kofta skewers for 12-15 minutes, turning occasionally.
  8. Let the kofta rest for a few minutes before serving with accompaniments.
