Preparation
- Grate the yellow onion and lightly squeeze to remove excess liquid.
- Finely mince the garlic and ginger, and chop the fresh parsley and mint.
- Combine the ground beef, optional ground lamb, grated onion, minced garlic and ginger, and all chopped herbs.
- Add the spices and tomato paste, and mix well.
- Cover and refrigerate for at least 30 minutes.
- Shape the mixture into kebabs and preheat the grill to medium-high heat.
- Grill the kofta skewers for 12-15 minutes, turning occasionally.
- Let the kofta rest for a few minutes before serving with accompaniments.
