For the Salsa
  • 1 Ripe Mango Pineapple can be substituted
  • 1 Avocado No direct substitute, Greek yogurt could work
  • 1/4 cup Red Onion Shallots or green onions can be used
  • 1 Jalapeño Adjust quantity for spice preference
  • 1/4 cup Fresh Cilantro Chives or parsley can be used
  • 1 tbsp Lime Juice Lemon juice can be swapped

Method
 

Step-by-Step Instructions
  1. In a bowl, combine olive oil, ground cumin, smoked paprika, garlic powder, salt and black pepper. Add the chicken and marinate for 15 minutes.
  2. Heat a skillet over medium heat and cook the marinated chicken for 6-8 minutes per side until fully cooked. Let it rest for 5 minutes before slicing.
  3. Prepare the salsa by mixing diced mango, avocado, red onion, jalapeño, and cilantro with lime juice and salt.
  4. Warm the corn tortillas in a skillet or microwave until soft.
  5. Assemble the tacos by placing chicken in tortillas and topping with mango avocado salsa. Serve immediately.
