Cooking Steps
- Slice the flank or skirt steak against the grain into thin strips, about ¼ inch thick. Marinate with soy sauce, peanut oil, and cornstarch for 10 minutes.
- In a bowl, whisk together chicken stock, Shaoxing wine, dark soy sauce, brown sugar, and cornstarch to prepare the sauce.
- Steam the broccoli for 4-5 minutes until bright green and just tender. Remove and set aside.
- Sear the marinated beef in a hot skillet for about 2 minutes on one side, then flip and cook for another minute. Add garlic and ginger for the last 30 seconds.
- Return the steamed broccoli to the skillet and add the sauce, stirring gently to combine. Cook for an additional 2-3 minutes until the sauce thickens.
- Serve hot over rice or noodles.
