  2. Begin by dicing the boneless, skinless chicken breast into bite-sized pieces for even cooking. In a bowl, whisk two eggs until well beaten. Dip each chicken piece into the egg wash, coating it thoroughly, then dredge in all-purpose flour.
  3. Heat a large skillet over medium heat and add a generous amount of olive oil to cover the bottom. Once hot, carefully add the coated chicken pieces in a single layer.
