Ingredients
  

For the Beef
  • 1 pound lean ground beef can substitute with turkey or Morning Star Crumbles
  • 1 tablespoon chili powder adjust for heat preference
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika optional but recommended
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder can use fresh garlic if desired
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
For the Salad
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 can black beans rinsed
  • 1 cup sweet corn charred if desired
  • 1/2 cup chopped red onions can swap for green onions
  • 1-2 avocados diced
  • 1/4 cup roasted sunflower seeds
  • 1 cup shredded pepper jack cheese omit for vegan version
  • 1 bag tortilla chips opt for healthier baked versions
For the Dressing
  • 1 cup cilantro lime dressing homemade or store-bought

Method
 

Preparation
  1. In a large skillet, heat a drizzle of oil over medium heat. Add 1 pound of lean ground beef and cook for about 5-7 minutes until browned. Stir in chili powder, ground cumin, smoked paprika, onion powder, garlic powder, oregano, salt, and salsa. Cook for an additional 3-4 minutes.
  2. In a separate skillet or grill pan, heat over medium-high heat. Add fresh corn and cook for about 4-5 minutes until slightly charred. Let cool and cut kernels off the cob.
  3. Chop 4 cups of romaine lettuce, halve 1 cup of cherry tomatoes, and dice half of a red onion and 1-2 avocados.
  4. In a blender, combine 1 cup of cilantro, juice of 2 limes, 1/4 cup olive oil, 1 clove garlic, and a pinch of salt. Blend until smooth and chill.
  5. In a large bowl, layer chopped romaine, cherry tomatoes, black beans, charred corn, diced red onion, and avocados. Pour the beef mixture over the top, then sprinkle with shredded cheese and sunflower seeds.
  6. Serve the cilantro lime dressing on the side, allowing guests to drizzle it over their servings.
