  • 24 ounces Marinara Sauce high-quality
  • 4 cups Beef Broth or vegetable broth
Noodles
  • 8 ounces Gluten-Free Lasagna Noodles broken into pieces

  • 2 cups Baby Spinach
  • 1 cup Raw Cashews soaked
Flavor Boost
  • 2 tablespoons Lemon Juice fresh
  • 1 teaspoon Salt adjust to taste

  • 1 teaspoon Dried Oregano or to taste

Preparation
  1. Soak raw cashews for at least 2 hours or submerge in boiling water for 30 minutes, then blend with water, lemon juice, garlic, salt, and pepper until smooth.
  2. Heat olive oil in a large pot over medium-high heat; sauté diced onion for 2-3 minutes, then add ground beef or turkey until browned.
  3. Stir in minced garlic, cooking until fragrant; add tomato paste and cook for another minute.
  4. Pour in marinara sauce, Italian seasoning, dried oregano, garlic powder, salt, and pepper; add beef broth and bring to a gentle boil.
  5. Add broken lasagna noodles, reduce heat to simmer, cover, and cook for 8-10 minutes.
  6. Fold in fresh baby spinach until wilted; taste and adjust seasonings, then serve with cashew ricotta.
