Ingredients
  

For the Meatballs
  • 1 lb Ground Beef lean or regular
  • 1 cup Breadcrumbs can use crushed crackers for gluten-free
  • 1 large Egg or a flax egg for vegan
  • 2 cloves Garlic (minced) fresh garlic recommended
  • 1 tbsp Soy Sauce low-sodium is a healthier option
  • 1/2 cup Korean BBQ Sauce teriyaki sauce can be used as a substitute
  • 1 tbsp Sesame Oil can be omitted
  • 1/2 tsp Ground Black Pepper swap with white pepper if desired
For the Roasted Vegetables
  • 2 cups Broccoli Florets can substitute with cauliflower or green beans
  • 2 medium Carrot Slices can swap for bell peppers or zucchini
  • 1 large Red Bell Pepper other bell pepper colors can be used
  • 2 tbsp Olive Oil coconut oil can be an alternative
  • to taste Salt adjust based on dietary needs
For Garnish
  • 2 tbsp Green Onions chives can be used as a substitute
  • 1 tbsp Sesame Seeds omit if catering to nut allergies

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, minced garlic, soy sauce, sesame oil, and black pepper. Mix until everything is well incorporated but tender.
  3. Form the meat mixture into 16 equal meatballs and place on one side of the prepared baking sheet.
  4. In another bowl, combine broccoli, carrot slices, and red bell pepper. Drizzle with olive oil and salt, then spread them on the other side of the baking sheet.
  5. Bake for 25-30 minutes, turning the meatballs halfway. Brush with Korean BBQ sauce during the last 5 minutes.
  6. Remove from the oven and serve with roasted vegetables, garnished with green onions and sesame seeds.

Notes

These meatballs can be stored in the fridge for 3 days or frozen for up to 3 months. Reheat by thawing overnight and warming in the oven or microwave.
