- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine ground beef, breadcrumbs, egg, minced garlic, soy sauce, sesame oil, and black pepper. Mix until everything is well incorporated but tender.
- Form the meat mixture into 16 equal meatballs and place on one side of the prepared baking sheet.
- In another bowl, combine broccoli, carrot slices, and red bell pepper. Drizzle with olive oil and salt, then spread them on the other side of the baking sheet.
- Bake for 25-30 minutes, turning the meatballs halfway. Brush with Korean BBQ sauce during the last 5 minutes.
- Remove from the oven and serve with roasted vegetables, garnished with green onions and sesame seeds.

These meatballs can be stored in the fridge for 3 days or frozen for up to 3 months. Reheat by thawing overnight and warming in the oven or microwave.
