Preparation
  1. Preheat your oven to 400°F (200°C) and prepare your baking sheet lined with parchment paper.
  2. Wash and scrub the sweet potatoes, then cut them into evenly-sized 1-inch cubes.
  3. In a large mixing bowl, toss the sweet potato cubes with olive oil, salt, and pepper to coat evenly.
  4. Spread the sweet potato cubes in a single layer on the baking sheet and roast for 25-30 minutes.
  5. Once roasted, remove from the oven and sprinkle feta cheese and Kalamata olives over the sweet potatoes.
