  • 1/2 cup Feta Cheese Crumpled
  • 1/4 cup Olives Sliced
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice
  • 1 pinch Salt To taste
  • 1 pinch Pepper To taste
  • 2 large Whole Wheat Tortillas

Method
 

Preparation Steps
  1. In a mixing bowl, combine mixed greens, chopped cucumbers, chopped tomatoes, feta cheese, and olives.
  2. Drizzle olive oil and lemon juice over the mixture, then sprinkle with salt and pepper.
  3. Toss gently to combine all ingredients.
  4. Place a tortilla on a cutting board and layer half of the veggie mixture in the center.
  5. Fold the sides of the tortilla over the filling and roll tightly from the bottom to form a wrap.
  6. Repeat with the second tortilla and remaining filling.
  7. Cut the wraps in half and serve immediately or wrap in plastic for later.
